This sourdough loaf brings the promise of summer’s bounty when the trees are groaning with fruit and the veggie plots are wild with produce. And if you’re lucky enough to have a fig tree you know it will soon be festooned with luscious figs hanging off the bough. This bread is laden with large chunks of organic dried mission figs and a warm hint of fennel permeating the crumb. It’s a delectable experience tearing a chunk open to find a piece of fig, like a buried treasure. You’ll smell the fennel but its taste is not overpowering. A perfect balance.
This bread is best enjoyed unadorned, with nothing but a spread of cultured butter or a couple of thin slices of prosciutto. A glass of cool chardonnay might be a nice accompaniment.
