Description
It’s called Dark Ale Bread because dark ale is the central ingredient of this inspired, delicious loaf. It’s made with Hoyne’s Finnegans Irish Stout, a favourite of mine, not the least of which is the name which comes from the James Joyce novel, Finnegan’s Wake.
A bite of this bread is a beautiful balance of bitter and sweet, with notes of barley, coffee, and chocolate. It pairs well with the sourness of the levain and the flavourful combination of whole red spring wheat and rye flours.
Allow this bread’s flavours to shine! It’s great simple, with a slather of good butter. Or you can build a delicious BLT with mustard, mayo, and smoke-infused sea salt. Complement that masterpiece with a chilled glass of Finnegans Irish Stout. Hoyne’s Pilsener would be less intrusive and perfectly complementary.
