Some of the most satisfying breads are the simplest ones. This is a large loaf with a single ingredient as the star: Vancouver Island-Grown Whole Wheat flour. The only other ingredients are water, salt and sourdough leaven.
The wheat comes from Stillmeadow Farm of Metchosin, located just down the road from Nootka Rose Mill, which mills most Happy Monk flour.
We’re giving this locally-grown wheat an opportunity to shine. It has 100 percent of the wheat berry in the dark crust and beautifully textured crumb. I’ve used this flour consistently over the past year, so most Happy Monk customers have already savoured it.
Time for a closer taste. Shut your eyes, take a bite, and maybe you’ll detect an earthy essence from fields of Metchosin. It’s also one of the healthiest loaves you can eat, as you’re getting the whole nutrition the grain has to offer.
