I love the rustic shape of the round boule loaf, but the pan loaf is no less artisanal, especially when the heart is set on a wholesome sandwich loaf. The inspiration is the Sourdough Sandwich Loaf from Fry’s Bakery in Victoria West. It’s a beautiful, domed, golden loaf, flecked with sesame seeds, that is so satisfying to bite into! Chewy and full of whole-grain flavour.
This is no bag of supermarket Wonder Bread. It’s a substantial sandwich loaf, made with bread flour and a 30 percent mix of whole wheat, whole rye and whole spelt flours. A schmeer of Dijon mustard, a slice of heirloom tomato, leafy green lettuce, a slice of ham, or marinated chicken breast. Pickle on the side. Glass of ice-cold beer.
