Are you, like me, searching for the perfect sandwich bread? Here’s the latest Happy Monk iteration: a hearty-looking loaf with lots of whole grain flavour, a hint of sweetness and a pillowy soft crumb. You can slice off broad slices that match those first sandwich schmears of butter, mayo or mustard. It happily supports the big flavours of tomatoes, sprouts, pickles… cheese, and meat. And hot sauce! Maybe a leaf or two of crisp romaine or, god forbid, a layer of potato chips for a satisfying crunch.
Sometimes we ask a lot of our sandwich bread, but we’re equally pleased with how it holds a layer of peanut butter and jam, adding to the simple pleasure of a sandwich that brings back happy memories of lunch hours, lunchboxes and playgrounds. But we’re older now and expect more significant things than we did in the distant past. This loaf takes our PBJ to a higher realm than those slabs of Wonder Bread.
The emphasis here is on flavour and taste, no seeds, nuts or sprouted grain. The pure flavour of Vancouver Island Wheat flour, a drizzle of honey, and a glug of Extra Virgin Olive Oil. This loaf is almost the Approachable Loaf, with an added twist of tenderness in the crumb. Here is healthy whole grain bread for your favourite sandwich, for a hearty weekend sandwich feast or for something to celebrate with when you reach the peak of Mount Norman.
